Barbara Paulsen, MS, RD

Barbara Paulsen received her B.A. degree in dietetics from the University of Montana and her M.S. degree in human nutrition from the University of Missouri, Columbia.  She did her dietetic internship at Peter Bent Brigham Hospital in Boston and is a registered dietitian.

Barbara has worked as a clinical dietitian, a research dietitian primarily in the area of behavioral approaches to weight management, and has had her own business doing patient counseling and program development.

She has extensive background in community nutrition having been the Program Director for the Las Vegas office of the Dairy Council of Utah/Nevada for 20 years. In this position she developed and delivered nutrition programs for educators, health professionals, consumers and the media. 

She currently is a coordinator for the LIFESTEPS® Weight Management Program which she helped develop and is a Part-time Instructor in the Department of Nutrition Sciences at UNLV where she teaches Community Nutrition and Nutrition, Food and Policy. 

She also serves as the Community Nutrition Preceptor for the UNLV Dietetic Internship Program. Barbara has numerous publications in the area of behavioral approaches to weight management and has conducted numerous workshops in the use of behavioral techniques in weight management, lifestyle change and other nutrition education settings.

Barbara is active in the American Dietetic Association, the Nevada Dietetic Association and the Southern Nevada Dietetic Association. She is also an active member of a number of nutrition/wellness committees at the local level including Partners for a Healthy Nevada: Southern Nevada’s Obesity Prevention Coalition and the Clark County Agriculture in the Classroom Committee. She is a member of the Governor’s Advisory Council on Fitness and Wellness.
